The Nagano region is famous for its soba noodles made of buckwheat, a staple in the area. These thin noodles are either served cold on a bamboo tray with a dipping sauce, or in a hot broth as a noodle soup. Handmade noodles can be found in lots of restaurants in Hakuba, along with buckwheat in other forms including tea and dumplings too.
Our local favorite was Soba Shubo Zen, where we tried the hot soba with tempura and local sake. It was an incredible meal; the soba was warm and filling, the tempura crunchy and service impeccable. The table settings include lovely ceramics; from which you select your own sake cup. It’s a beautiful building with a peaceful interior and traditional tatami. Reservations recommended in the evenings.
